Vinification
Quality selection in the vineyard of the best Syrah with southern exposure. Green harvest in july to eliminate overproduction as well as grapes of lesser quality and to harvest the fruits at the top of their maturity.
Destemming and sorting by hand for the total harvest. assembling the two
grape varieties to further a fermentation that goes beyond 45 daysat temperatures regulated at 24ºC.
Delestages (crushing of the cap) and remontages with oxygenations everyday during the first week followed by remontages depending on vintage and profile to be obtained.
Oxygenation with micro action at the end of the fermentation to soften certain
tannins that might become aggressive as time passes.
Racking on air with ten days intervals during one month before storage in one or two year old oak fusts for 16 months.

Tasting Notes
This nice purple red wine is full of fruit, spice and menthol fragrances. The
tannins, softened by the elevation on oak barrels, give way to a grand
aftertaste with accents of licorice.
It goes just as well with jugged hare as with a fine chocolate pastry. The wine
has not been filtered and therefore needs to be decanted some hours before.
