Terroir
Mainly clay/limestone.
Long extended limestone plateaus (north-east/south-west) formed by sea in the Secondairy and Tertiairy periods. Series of rock formations giving the landscape its particular colours of bright white rocks blending with the red tones of the bauxite, the sandstone and the clay.

Vinification
Direct pressing for Syrah and Mourverdre and vat bleeding for the Grenache.
Racking of the must during 48 hours in cold conditions at 5ºC.
Slow fermentation at 15º/16ºC for 25 days while during the last 10 days the
fine depots are brought back into suspension. Repetitive racking during 2
months to eliminate the larger residues followed by filtering and electrodialysis to stabilise the product.
Tasting notes
Intense rosé colour with strong reflections liberating an explosion of raspberry-, fruit drop- and white flower aromas and leaving a warm and delicious mineral aftertaste. The liveliness and balance make this wine very suitable for exotic meals or a cuttlefish dish.
