Mix of dolomite limestone from Secondairy period and sandstone-like grounds from Tertiairy period.

Grape varieties
60% syrah
25% mourvèdre
15% grenache

Yield
35 Hl /hectare

Vinification
Quality selection in the vineyard and "green" harvest in july in order to limit the
yields so that the fruit obtains maximum ripeness.
Destemming and sorting done by hand for the total harvest.
Fermentation of 15 days for the Grenache, 25 days for the Mourvedre and 35
days for the Syrah at temperatures between 23 and 25 degrees Celcius.
Delestages (crushing of the cap) and remontages with oxygenations during the first week followed by remontages depending on tastings and year.
Racking with oxygenation every 10 days during one month before storage in
new and one year old fusts for a period of twelve months.

Tasting Notes
This wine has a intense red colour with nice dark reflections. Its bouquet is
developped fully on oak with strong aromas of red fruit concentrate (cherries). The full and round taste is characterized by woody tannins and vanillas giving it a long aftertaste. . One can already profit immediately of this bottle or keep it for 3 to 5 years. It is also a wine to store and accompany lamb or other such dish. The wine is not filtered, therefore it should be decanted a few hours before serving.
