Vinification
Destemming and sorting by hand for the total harvest.
Pre-fermentary maceration in cold conditions for 48 hours at 7ºC.
Fermentation for 25 days at temperatures controlled at 24ºC.
Delestages (crushing of the cap) and remontages (pumping over) combined with aeration everyday during the first week of fermentation followed with aeration every 20 days during 3 months.
Tasting Notes
Purple colour with violet reflections. The firm taste is supported by the tannins accompanied by strong tones of red fruits and spices. Goes perfectly with cold red meats.
