Vinification
Destemming and sorting done by hand for the total of the harvest.
Fermentation for 28 days at a temperature regulated at 24ºC.
Delestage (crushing of the cap) and remontage (pumping over) with aeration every day during the first week of fermentation followed by remontages depending on daily tastings.
Racking with aeration every 20 days during 3 months.
Tasting Notes
Dark coulored with brilliant reflections. A bouquet existing of tempting black fruits (cassis). Round and harmonious in the mouth. Very special with magret de canard.
