Terroir
Mix of sandstone from Tertiaire period and alluvial soil from Secondary period.

Grape varieties
70% grenache
30% syrah

Yield
40 Hl/hectare

Vinification
Destemming and sorting is done by hand for the total harvest.
Cooled pre-fermentary maceration at 7ºC for 72 hours.
Fermentation during 8 days for Grenache and 12 days for Syrah at temperatures regulated at 22º C.
Delestages (crushing of the cap) and remontages during the first 2 days followed by remontages depending on daily tastings.
Racking with oxygenation every 20 days after fermentation during 3 months.

Tasting Notes
This assembly of Grenache and Syrah gives as bouquet a mix of red fruits and spices.
The soft fleshy taste developes a long aftertaste of ripe fruits.
The wine is very tasteful when drunk young with charcoal roasts or can be kept for one or two years and served with a cheese platter.
